Orange, Cardamom & Brandy Biscuits
I thought I’d play around with a couple of biscuit recipes in preparation for the big Christmas bake-off. This adapted Bill Granger recipe is perfect. The flavours allude to all those well-remembered festive tastes - brandy, zesty orange and warm spices. It would be absolutely perfect with an eggy nog, but a cup of tea is equally as satisfying.
Orange, Cardamom & Brandy Biscuits
(recipe adapted from Bill Granger)
375g plain flour (all purpose)
2 teaspoons baking powder
1 tablespoon ground ginger
1 teaspoon ground nutmeg
1 teaspoon ground cardamom
250g softened butter
345g brown sugar
3 tablespoons brandy
Zest of 1 orange, finely grated
30g granulated sugar (for coating)
Preheat the oven to 180 degrees Celcius.
Sift the flour, baking powder and spices into a large bowl. Put aside.
Place the butter and brown sugar in the bowl of an electric mixter and beat until pale and creamy. Add the brandy and zest to the creamed butter and mix well.
Fold the flour into the butter mixture in two batches. You may need to get your hands in at some stage to bring it all together.
Line a loaf tin with clingfilm and press half the mixture in firmly (you will be using the tin as a mould whilst the mixture firms up). Place in the freezer for half an hour.
Remove loaf tin from freezer and tip out the block of dough. Cut into 7mm slices, coat with egg white and granulated sugar. Place sugar side up on the tray and bake for 10-12 minutes until lightly browned.
Makes approx 40 biscuits.

Thanks for the sample - absolutely delicious. I’ll be sure to make these when my mum comes down, I know she’ll love them too. Egg nog would be nice, or a cup of tea too, however I washed them down with a glass of cold milk and that was fantastic too.

Hey Anna. Mmm…milk is always soooo good. I love it icy cold in an icy cold glass. It’s the only way to have it!
