Did a wonderful chocolate appreciation class at the delicious Monsieur Truffe, who is delicious not just for his chocolate, but for his wonderful French accent as well!
We learned about cocoa, where its grown, the different types of beans and what is involved in processing. We discussed and tasted single origin, single estate varieties, and blends. Nibs, powders and pucks, we sampled everything from Cadbury Old Gold to Michel Cluizel (mmm!).
But the best bit, was the tasting – and here are my tasting notes, complete with little happy faces for the ones I particularly liked.

Glad to hear you got to one of Thibault’s tastings – they’re so awesome arne’t they! I’m curious to know what chocolates were at the top of your list? Personally I’m a big can of the Cacao Barry 75% Tanzanie and also 65% Alto el Sol (I think it’s Peruvian). Will you be attending the Chocolate Rush festival this year?

Hey Simon – yes, so awesome I think I need to go back for more tasting!
Hmm…I really liked the 2007 Venezualan. Also, a Papau New Guinean (which was processed by a Spanish chocolatier) that was tobacco-y and cinnamonny. I also had a happy face next to a 72% variety, although I forgot to write down the name!
I would love to attend Chocolate Rush. What sane food blogging girl wouldn’t?!?
